Featured Recipe: Gluten Free Cinnamon Rolls (Vegan)
This gluten free adaptation of the classic cinnamon roll will fill your home with fragrance and satisfy your sweet tooth, while containing no gluten or dairy at all!
Servings: 9 Rolls
Ingredients
Cinnamon Rolls
- 1 Packet Instant Yeast
- 1.5 Cup "Almond Breeze" Almond Milk (Unsweetened)
- 0.5 Cup Earth Balance
- 0.25 tsp Sea Salt
- 4 Cups “Bob’s Red Mill” Gluten Free All Purpose Flour
- 0.5 tbsp “Frontier” Cinnamon
- 0.25 Cup Organic Cane Sugar
- 1 tbsp Organic Cane Sugar
- 1 tbsp Guar Gum
Icing (Optional)
- 1 Cup Organic Powdered Sugar
- 0.33 Cup "Almond Breeze" Almond Milk
Instructions
- In a sauce pan, melt 3 tbsp Earth Balance in almond milk, not bringing it to a boil.
- Once cooled to lukewarm temperature, add your yeast and allow to activate for 10 minutes. Add 1 tbsp sugar and sea salt, transfer to a large mixing bowl and stir.
- Add your flour a little at a time until it’s too sticky to mix by hand.
- Transfer to a floured surface and knead for a few minutes.
- Place your dough ball in a clean, lightly oiled mixing bowl, cover with plastic wrap and allow to double in size for about 1 hour in a slightly warm place.
- Preheat your oven to 350F.
- On a lightly floured surface, roll out your dough into a rectangle roughly 1/8” thick.
- Brush with 3 tbsp of melted Earth Balance, top with ¼ cup of sugar and 1 tbsp cinnamon.
- Starting from the longer edge, roll towards the opposite edge, cut into 9 equal pieces and transfer cut side facing up, into a greased 8X8 baking dish.
- Make sure the pieces are snug (press them down slightly if needed) and top with the remaining 2 tbsp of melted Earth Balance.
- Bake for 30 minutes, top with your icing and enjoy!
