Ingredients

Skewers

  • 1 Box Sophie’s Kitchen Vegan Breaded Coconut Shrimp (250g)
  • 1 Cup Organic Pineapple (Cut Into Chunks)
  • 1 Medium Organic Red Onion (Cut Into Chunks)
  • 13 Bamboo Skewers

Sauce

  • 0.25 Can “Thai Kitchen” Organic Coconut Milk
  • 0.25 tbsp Fresh Organic Ginger (Minced)
  • 1 Clove Fresh Organic Garlic
  • 2 Limes (Juiced)
  • 2 tbsp Organic Unsalted Peanut Butter
  • 2 tbsp Fresh Organic Cilantro
  • 1 tsp Red Thai Curry Paste
  • 0.5 tbsp “Simply Natural” Organic Red Sriracha
  • Sea Salt (To Taste)

Instructions

  • Soak your skewers in warm water for about 15 minutes before assembly.
  • Skewer your pineapple, vegan shrimp and red onion until all ingredients are gone.
  • In a blender, combine all of your sauce ingredients and set aside.
  • Grill the skewers for 2-4 minutes on each side and cover with sauce while hot.
  • Serve as a unique meatless option this barbecue season.
