Ingredients

- 1 Box Sophie’s Kitchen Vegan Breaded Coconut Shrimp (250g)
- 1 Cup Organic Pineapple (Cut Into Chunks)
- 1 Medium Organic Red Onion (Cut Into Chunks)
- 13 Bamboo Skewers
Sauce
- 0.25 Can “Thai Kitchen” Organic Coconut Milk
- 0.25 tbsp Fresh Organic Ginger (Minced)
- 1 Clove Fresh Organic Garlic
- 2 Limes (Juiced)
- 2 tbsp Organic Unsalted Peanut Butter
- 2 tbsp Fresh Organic Cilantro
- 1 tsp Red Thai Curry Paste
- 0.5 tbsp “Simply Natural” Organic Red Sriracha
- Sea Salt (To Taste)
Instructions
- Soak your skewers in warm water for about 15 minutes before assembly.
- Skewer your pineapple, vegan shrimp and red onion until all ingredients are gone.
- In a blender, combine all of your sauce ingredients and set aside.
- Grill the skewers for 2-4 minutes on each side and cover with sauce while hot.
- Serve as a unique meatless option this barbecue season.
