Featured Recipe: Avocado Lime Ice Cream Cookie Sandwiches (Dairy Free, Raw Vegan)
Much like the classic Key Lime Pie, these ice cream cookie sandwiches bring a bit of tartness along with added benefits of healthy fats from avocados!
Servings: 8 Sandwiches
Ingredients
Ice Cream
- 2 Medium Organic Avocados
- 3 Organic Limes (Juiced)
- 0.5 Cup “Madhava” Raw Agave Nectar
- 2 tbsp Coconut Oil (Melted)
Cookies
- 1 Cup Organic Hazelnut Flour
- 1 Cup Organic Almond Flour
- 1 Cup Organic Coconut Shreds
- 0.5 Cup “Canadian Heritage Organics” Maple Syrup
- 0.25 Cup “Maison D’Orphee Extra Virgin Coconut Oil
- 1 tsp "Organic Traditions" Vanilla Bean Powder
Instructions
- In a high speed blender, combine all of the ice cream ingredients until smooth and allow to firm up in the freezer for 2 hours.
- In a large mixing bowl, combine all of the cookie ingredients and form into 16 cookies using a ring mold or cookie cutter.
- Refrigerate cookies for 30 minutes to 1 hour or until completely firm.
- Scoop some of your ice cream onto every other cookie and use the leftover ones to complete the sandwiches.
- Freeze for another couple of hours for additional firmness and enjoy as a healthy dessert or snack at any time!
