Featured Guest Recipe : Mother Earth Bowl with Chef Lester Austin
Mother Earth Bowl
Join Chef Lester Austin as he prepares his favourite rice bowl in celebration of Earth Month.
Ingredients
- 1 Chicken Breast
- 1 Tbs Avocado Oil
- 1/2 Shallot Sliced
- 2 Green Onion Springs Sliced
- 1 Tbs Sesame Seed toasted
- 1 Clove Garlic puree
- 8 Asparagus split down the centre and cu in half
- 1 Tbs Coconut Secret
- 1 Tsp Hot Sauce
- 1 Watermelon Radish Julienne
- 2 Endive chopoed
- 1 Roma Tomato 4 remove flesh from centre
- 1 Tap Oregano Paste
- 1 Tsp Red Chili Paste
- 1/8 Cup of Chicken Stock
Rice
- 1 cup of cooked Basmati Rice
- 2 Tsp Pumpkin Oil
- 2 Tbs Avocado Oil
- 1 Juice of Lime
- 1/2 cup of assorted Sprouts
- 1 Tbs of Spice Blend
Instructions
- Place Chicken in hot pan with Avacado oil
- Cook on one side for 3 mns
- Remove remove pan from heat
- Allow chicken to cool and rest and slice into strips
Veggies
- All vegetables should be preped a head of time
- Add more avocado oil to original chicken pan
- Add chichen, shallots, green onion saute
- Add garlic, radish, asparagus mix well
- Add coconut aminos, hot sauce, mix and add endive and tomato's, stir in stock and allow liquid to evaporate
- Place sprouts into bowl add oil and spices
- Chop desired amount of sprouts adds to bowl and mix well
- Mold rice into center of bowl, place chicken and vegetables in a circular pattern around rice and place some sprouts on top
