Featured Recipe: Pizza Mac n’ Cheese (Dairy Free, Gluten Free)
Two of kids’ favorite dishes mashed into one - sneaking in some healthy greens and B-complex rich nutritional yeast.

Ingredients
- 1 Bag “Rizopia” Organic Brown Rice Pasta Elbows
- 1 Jar “Nature’s Emporium” Pizza Sauce
- 1 Pack Earthbound Farm Organic Baby Spinach
- 0.5 Cup Organic Fresh Basil
- 0.5 Pack “Yves” Pepperoni (120g)
"Cheese" Sauce
- 1 Pack “Daiya” Cheddar Cheese Shreds (227g)
- 3 Cups “So Delicious” Coconut Beverage (Unsweetened)
- 0.25 Cup Nutritional Yeast
- 1 tbsp "Simply Organic" Garlic Powder
- 1 tbsp “Frontier” Onion Powder
- 1 tbsp Oregano
- 0.25 Cup "Sarafino" Extra Virgin Olive Oil
- Sea Salt (To Taste)
Instructions
- Cook the pasta elbows in salted simmering water for 8-10 minutes or until al dente. Rinse with cold water to stop the cooking process and set aside.
- Preheat your oven to 375F.
- In a medium saucepan combine all of the “Cheese Sauce” ingredients except Daiya and bring to a boil.
- Whisk in Daiya cheddar into boiling liquid until fully melted and combined.
- Combine cheese sauce with cooked pasta and place in a parchment lined baking dish.
- Top with tomato sauce and vegan pepperoni and bake for 15 minutes.
- Broil for additional 5 minutes to crisp the pepperoni and serve with a drizzle of olive oil and fresh basil shreds.
