Featured Recipe: Pumpkin Seed Pesto Spelt Pizza
Not only does this pizza taste great, but it also packs a variety of nutrients important for Men's Health, including zinc, found in pumpkin seeds!
Servings: 1 14" Pizza (8 Slices)
Ingredients
Crust
- 1 Nature’s Spelt Pizza Crust
Pumpkin Seed Pesto
- 0.5 cup Pumpkin Seeds
- 2 tbsp Pine Nuts
- 1 clove Fresh Garlic
- 0.25 cup "Sarafino" Extra Virgin Olive Oil
- 2 cups Earthbound Farm Organic Baby Spinach (Loosely Packed)
- 0.5 cup Fresh Basil (Loosely Packed)
- 0.25 tsp Sea Salt
Toppings
- 0.25 cup Zucchini (Sliced In Half Moons)
- 3 tbsp Sun Dried Tomatoes (Sliced)
- 6 spears Asparagus (Sliced In Half Lengthwise)
- 4 hearts Artichoke (Quartered)
- 3 tbsp Red Onion (Sliced In Half Moon Rings)
- 2 tbsp Pickled Hot Peppers (Sliced)
Cheese
- 1 Pack Daiya Pepperjack Cheese
Instructions
- Pre-heat your oven to 450F.
- Spread out your pizza dough on a floured (or parchment lined) pizza pan.
- In a food processor, combine all of the pesto ingredients and spread on top of your spelt crust.
- Finish with Daiya cheese, your desired amount of toppings and bake for 22 minutes.
