Featured Recipe: Quinoa Stuffed Tomatoes
Savory and super satisfying, these Vegan stuffed tomatoes are loaded with heart healthy fibre, plant-protein + healthy fats. Enjoy as a side or solo!

Ingredients
- 8 Greenhouse Tomatoes (Large)
Stuffing
- 1 Cup Sprouted Quinoa (Rinsed)
- 1.5 Cups Water
- 1 Cup Onions (Diced)
- 2 Cloves garlic (Minced)
- 2 Medium Carrots (Diced)
- 2 Stalks Celery (Diced)
- 1 Pack (210g) “Soyganic” Smoked Tofu (Grated)
- 0.5 Medium Lemon (Juiced, Zested)
- 1 tbsp Fresh Thyme
- 1 tbsp “Smoke” Smoked Paprika
- 3 tbsp "Sarafino" Extra Virgin Olive Oil
- Black Pepper to Taste
- Sea Salt to Taste
Instructions
- Pre-heat your oven to 375F
- In a large sauté pan, cook your onions, garlic, carrots and celery in olive oil over medium heat for 10 minutes.
- Add the remaining ingredients, combine well, cover with a lid and cook for another 10-15 minutes on low heat.
- Hollow out your tomatoes from the top, making sure they stay in one piece.
- Pack them tight with the quinoa mix, place on a parchment lined baking dish and bake for 20-25 minutes.
- Decorate with a light drizzle of olive oil and a fresh sprig of thyme.
