Strawberry Coconut Mousse
This strawberry and coconut dual layer mousse is loaded with healthy fats and sweetened only with mineral rich, organic maple syrup.

Ingredients
Strawberry Layer:
- 1 Can Organic “Thai Kitchen” Coconut Milk Fat (Discard Liquid Portion) (400mL)
- 1 Cup Organic Cacao Butter (Melted)
- 1/3 Cup Organic Maple Syrup
- 10 Organic Strawberries (Blended)
Coconut Layer:
- 1 Can Organic “Thai Kitchen” Coconut Milk Fat (Discard Liquid Portion) (400mL)
- 1 Cup Organic Virgin Coconut Butter (Melted)
- 1/3 Cup Organic Maple Syrup
Instructions
- Over two double boilers, melt all of the strawberry and coconut layer ingredients separately and whisk until fully combined.
- Using a cupcake tray, angle your serving dishes at a 45° angle and pour in the coconut layer. Allow to fully set in the fridge for several hours and top with strawberry layer. Allow to set fully and serve with whipped coconut cream and fresh strawberries.
